½ cup BULGUR
1 pound fresh ASPARAGUS
1 pound greatO GROUND BEEF
½ cup thin sliced SHALLOTS
1 tablespoon thin sliced fresh BASIL LEAVES
2 cups CHERRY TOMATOES, halved


1. Prepare the bulgur according to package directions, fluff and set aside.

2. Trim off 1 inch from the bottom of asparagus and discard. Thin slice the trimmed asparagus on the diagonal and set aside.

3. Heat a heavy bottom skillet over medium heat and add the ground beef. Cook beef for 4 minutes or until browned and crumbly. Drain the fat and discard. Add the shallots and asparagus to the hot skillet with the ground beef and cook for 2 minutes. Season the beef mixture to taste with salt and pepper.

4. Stir in the cooked bulgur, basil leaves and tomatoes to the asparagus beef mixture and cook 2 minutes; serve immediately.
