Prep time: 15 minutes • Cook time: 20 minutes

INGREDIENTS:

2 cups WHOLE WHEAT PENNE PASTA
1 pound greatO GROUND BEEF
1 cup fine chopped SWEET YELLOW ONION
2 tablespoons fine chopped GARLIC
1 cup thin sliced RED BELL PEPPER
4 cups FRESH BABY SPINACH LEAVES
½ cup SHREDDED FAT FREE MOZZARELLA CHEESE

DIRECTIONS:

1. Cook the penne pasta according to package directions, drain, and set aside.

2. While the pasta is cooking, heat a heavy bottom skillet over medium high heat. Add the ground beef and cook until browned and crumbly. Drain and discard the fat. Add the onion to the ground beef and continue to cook, stirring often for 2 minutes. Add the garlic and red pepper. Cook the mixture for 1 minute. Add the baby spinach and cook, stirring constantly for 2 minutes.  Season the mixture with salt and pepper.

3. Stir in the penne pasta and top with the shredded mozzarella cheese.  Serve immediately and enjoy.
