½ large SWEET YELLOW ONION, thin sliced
2 large PORTOBELLO MUSHROOMS, cut into ¼-inch slices
2 tablespoons GRAPESEED OIL
2 tablespoons chopped GARLIC CLOVES
1 tablespoon chopped fresh THYME
1 cup RED WINE
1 pound greatO GROUND BEEF
½ teaspoon each KOSHER SALT & fresh cracked BLACK PEPPER
¼ cup chopped PARSLEY


1. Combine the sliced onion, mushroom slices and oil in a bowl and toss to coat. Heat a heavy bottom skillet over medium heat for 2 minutes. Add the onion mushroom mixture to the hot skillet and cook for 5 minutes, stirring often, until the onions are golden brown on the edges and mushrooms are softened.

2. Add the garlic and continue to stir–fry for 1 more minute. Add the thyme and red wine to the mixture and set aside in a bowl.

3. Combine the ground beef, salt and pepper in a bowl and shape into 4 oval patties 1 ½ inches thick. Heat the same skillet (do not wash) over medium heat and brown the patties on each side for 2 minutes. Drain and discard the fat. Pour the onion mushroom mixture over the patties and cook uncovered over medium low heat for 20-30 minutes. Place the patties and sauce in a serving platter and garnish with parsley. Serve immediately.
