1/4 cup BROWN SUGAR or BROWN SUGAR SPLENDA
3 Tablespoons REDUCED SODIUM SOY SAUCE
2 teaspoons SESAME OIL
1/2 teaspoon CRUSHED RED PEPPER
1 ½ teaspoon chopped FRESH GINGER
3 cups cubed SWEET POTATOES or DICED BUTTERNUT SQUASH
1 teaspoon GRAPESEED OIL
3 large CLOVES GARLIC, thin sliced
1 pound greatO 90/10% GROUND BEEF
4 GREEN ONIONS, thin sliced
1. Combine the brown sugar, soy sauce, sesame oil, crushed red pepper and ginger in a small bowl, stir to dissolve the sugar and set aside.
2. Place the cubed sweet potato in a microwave safe baking dish, add 1 Tablespoon WATER and cover with plastic wrap. Microwave the sweet potatoes for 5 minutes or until fork tender. Remove from microwave and set aside.
3. Heat a heavy bottom skillet over medium heat for 2 minutes. Add the oil and sliced garlic and cook for one minute until golden. Add the ground beef and cook over medium high heat for 3 minutes or until crumbly and cooked through. Drain and discard the fat.
4. Add the sauce and green onions to the cooked ground beef and stir fry for a minute and cook for 4 minutes. Serve the ground beef over steaming cooked sweet potatoes and season to taste with salt and fresh cracked black pepper.
